This past July, the New York State Latino Restaurant Association (NYS-LRA) made history with its first-ever all-vegan Peruvian Heritage Month celebration at Gracie Mansion. The event, a testament to the growing popularity of plant-based cuisine and the ingenuity of Peruvian chefs, showcased the incredible versatility of Peruvian flavors in a completely new light.
